Honey and Sesame-glazed chicken breasts with roasted broccoli
Ingredients:
6 Tbsp unsalted chicken stock
1/3 cup honey (I use raw honey)
2 Tbsp dark sesame oil, divided
1 1/2 Tbsp whole grain mustard
4 (6 oz) skinless, boneless chicken breasts
3/4 teaspoon kosher salt, divided
1/2 tsp ground black pepper, divided
2 tsp toasted sesame seeds
1 bunch broccoli
3 cloves garlic, minced
4 Tbsp extra-virgin olive oil
Juice of 1/2- whole lemon
sea salt
freshly ground black pepper

Directions for Chicken:
-Combine the chicken stock, honey, 1T oil, and mustard in a small saucepan over medium-high heat, stirring with a whisk and bring to a boil. Reduce the heat and cook 10 minutes until syrupy, stirring occasionally.
-Heat a large non-stick skillet over medium-high heat. Add the remaining 1T oil to the pain and swirl to coat. Sprinkle the chicken breasts with 1/2 tsp salt and 1/4 tsp pepper and add the chicken to the pan; cooking chicken 6 minutes on each side until cooked through. Pour the honey mixture over the chicken and sprinkle with sesame seeds.
Directions for Roasted Broccoli
-Preheat oven to 425 degrees.
-Line a baking sheet with parchment paper or aluminum foil.
-Cut the broccoli into small bunches.
-In a large bowl (I use a gallon ziploc baggie), toss together the broccoli, garlic, olive oil, and lemon juice, season with salt and pepper.
-Spread broccoli in a single layer on the baking sheet and roast for 20 minutes.
-Remove baking sheet from the oven and serve.
