Do you want a different type of salmon? Are you tired of making it the same old way?
Thai Baked Salmon is quick and easy and will be sure to be a favorite.

Ingredients:
3 scallions (green onions)
approximately 1 cup of Thai sweet chili sauce (more or less for your preference)
a pinch of sea salt (or whatever your salt preference)
6 salmon filets either skin on or off (I prefer the skin off)

Cooking spray

parchment paper

tin foil

Directions:
1. Line a baking dish with tin foil or cooking spay and lay salmon filets in a row. Sprinkle a pinch of salt on top of each filet and add about 1 TBSP of the Thai sweet chili sauce. I use a basting brush to rub the sauce but you could easily use your fingers. Make sure to coat each filet evenly covering the top, sides and bottom.
2. Cover and let marinate for at least 2 hours or overnight (up to 24 hours).
3. Turn oven broiler onto high and position the top rack 5-6 inches below the heat source.
4. Line a baking sheet with unbleached parchment paper (I use tin foil because I always have that on hand) and spray with cooking spray. Place salmon filets (skin side down) and coat with remaining marinade from your dish.
5. Broil for 8 minutes, rotating baking sheet one time. Remove from the oven after 8 minutes and brush each salmon filet with an additional 2 tsp of the Thai sweet chili sauce and return to broiler for an additional 5 minutes or until salmon has caramelized. Sprinkle green onions on top of each filet and serve hot.

A delicious side for this dish is steamed broccoli which can be done while the salmon is in the broiler. I add a pinch of salt and pepper. You could also do a side of quinoa or brown rice.
