As the weather turns warmer, are you looking for a refreshing treat to take to picnics and family gatherings?
Watermelon Feta and Balsamic Pizza is the perfect treat that everyone will enjoy.
Ingredients:
1 watermelon , cut one inch think from center of the widest part
1 oz crumbled feta (I use the original but the basil and tomato flavor is also delicious on this recipe)
Kalamata olives, sliced (I typically use between 6-8) you could also substitute blueberries for olives
1 tsp mint leaves
1/2 tablespoon balsamic glaze

Directions:
1. Slice the widest part of a round watermelon in half. Lay the flat side down and cut a 1-inch thick slice from each half. Cut each half into 4 wedges (it will resemble the shape of a pizza)
2. Place on a round dish and assemble. Sprinkle feta cheese over the slices, olives, balsamic glaze and top with mint.

Note: I use Delallo balsamic glaze but you can use any balsamic that you have on hand or that you prefer.
